Georgia will begin producing black caviar in 2020 and introduce the product on the local market in March.
The country also plans to export the caviar, but manufacturers do not specify the plan details.
As specialist Eldar Kashia says, the project is ready, and the caviar production will begin in Gurjaani and Sagarejo, located in a Georgian region of Kakheti.
Kashia says that 1 g of black caviar equals the price of gold, and 1 kg black caviar costs at least 1000 USD at the foreign market.
According to Kashia, black caviar is a result of processing the Acipenser fish roe, adding the species of the fish needs ten years to mature.
He says the black caviar price is high, as it requires many expenses for the production.
''Ukrainians produce about 300 tonnes of the Acipenser fish per annum that can provide about 30 tonnes of caviar. Taking its price into account, Georgia can receive huge benefit,'' Kashia says.
